Chefs, as you all know, fish can be in high demand and tight supply over Christmas, so planning is essential. Throughout December, we often find that the weather can deteriorate, reducing the number of fishing boats going out, which in turn can impact availability or drive market prices up significantly (£££).
Our advice is to plan ahead and, where possible, buy now and freeze what you need to secure your fish and avoid steep market prices. We expect prices to double for some species as we approach Christmas.
